These grapes come from our oldest vines, planted 45 years ago on clay soil and in planting frames, where tradition and new agronomic techniques merge to physiologically control the plant and thus produce the highest quality grapes.

Harvesting and elaboration

The grapes are harvested only when the tannins reach full maturity. Hand-picked and in 200 kg boxes for rapid transport and selected prior to their gravity vatting into the wine tanks. Following fermentation between 18 and 24°C and short and continuous pumping overs, the barrelling is maintained the entire time that the skins continue to yield noble tannins to the wine, and a small devatting is carried out.
Then the wine rests for two days for a decanting to new 300 litre Caucasian oak barrels where it remains for 12 months.
The wine remains in the bottle for at least 18 months.
