BRUT NATURE SPARKLING WINE
100% Macabeo (or Viura or Macabeu) from our own vineyards in the municipality of Almendralejo. These vines are trellis-trained, in clay soil.
Recommended to be served from the first entrees and first courses.
Harvesting and elaboration
17,900 bottles of the 2016 harvest have been packaged.
The grapes are hand harvested in 200 kg boxes to be subjected to a selection process at the sorting table in the winery. Gentle pressing and the must is fermented at a temperature between 11 and 13°C. The bottling for the second fermentation takes place in January and February. The fermentation of the cava takes place inside our wine cellars and at a constant and regulated temperature of 11°C, always following the guidelines established by the “Champenoise” method. Disgorging is carried out when the sparkling wine has been bottled for a minimum period of 9 months. No kind of liquor is added to our sparkling wine, due to its optimal and elegant structure, which is why we obtain an excellent “Brut Nature” as a result
